Christmas Banquets with Moffat's 'Sci Fi' Banqueting Trolley

E&R Moffats' Chillogen technology is 'cook-chill systems in a box' delivering top quality festive food.

Maintaining food quality is a key issue at banquets and the latest Chillogen Banquet Trolleys from Moffat use advanced technology to ensure that the food is every bit as good when it comes out of the trolley as when it went in.

The Chillogen is a multi-tasking banquet trolley. Effectively, it is a cook-chill system in a box. Hot, plated meals can be prepared in advance, loaded into the trolley and left until they are required for the event. The trolley rapid chills the food, stores it chilled, regenerates it and then holds it hot automatically. The technology looks after everything until the banquet is served. Throughout that process, the Chillogen system ensures food is kept in peak condition. If the chef plans for the meat to be rare, then the trolley delivers it rare. If pastry is crisp when it goes in, it is crisp when it comes out.

Moffat has developed several technologies to protect food quality in the Chillogen banquet trolley, including the patented Sahara fan system which gives safer, more predictable temperature control. This system blows recirculated air through heating or chilling elements, rather than the conventional method of drawing air through the heat exchanger or heating elements first.

All these technologies moved one customer to describe the Moffat trolleys as something out of "science fiction." "The most important aspect of the trolleys is that the food quality is better and more consistent. Customers love the high standard of menus we serve," said Jim Vincent, managing director of Royal Armouries International Plc (RAI), the company that runs banqueting and events at the Royal Armouries Museum in Leeds.

Along with food quality, Moffats' banqueting trolleys have also delivered big costs savings for RAI. "The savings have been phenomenal. The trolleys have halved our front of house staffing requirements. With silver service, we'd need 70 or 80 people to serve 700 covers. With plated meals from the trolleys we only need 35. In fact, we could probably get by with fewer staff, but we left extra people to provide a cushion so that we could enhance customer service. But it's still a huge saving," Jim added.
