Chipping away at energy use

Rationals' SelfCooking Center offers energy-saving frying method.

All catering operations are looking to cut costs. Is there any equipment that needs replacing? Are there any areas where staff cuts can be made? Can energy consumption be reduced? In many cases a Rational SelfCooking Center, the next generation combi, can replace a deep fat fryer in the kitchen. It cooks pre-fried foods such as chips without using fat, speeding up cooking time and significantly improving the taste. In addition, it produces healthier foods that are lower in fat, such as French fries with one-third fewer calories and up to 80% less fat than when they are deep-fried.

The SelfCooking Center is very easy to use. Simply load up the special CombiFry basket, select what is to be cooked and the required browning and the SelfCooking Center does the rest. It detects the size of the food to be cooked, the load and then calculates the cooking time, temperature and ideal cabinet climate to optimise the process.

Being fully automatic the SelfCooking Centre frees up kitchen staff to do other tasks and actually cuts down on the number of staff required. It is fast too as the SelfCooking Center can prepare 200 portions of chips in just 15 minutes.

It uses sophisticated insulating materials that keep heat losses to an absolute minimum so less energy is required by the unit and less heat is emitted to the surrounding area, making the kitchen a more pleasant working environment.
